With 13 years of hospitality experience under his belt, Leonidas Zervakis, Chef de Cuisine at Sofitel Bahrain Zallaq Thalassa Sea & Spa, brings his culinary expertise to Yamaz restaurant. Discover his food inspirations, favourite ingredients and signature dish.

Having honed your skills across Europe with expertise in Mediterranean cuisine, how do you integrate those influences with local Middle Eastern flavours?
My experience across Europe specialising in Mediterranean cuisine has shown me how seamlessly these flavours complement local Middle Eastern influences. Greek cuisine, in particular, has deep historic ties with the Middle East, so integrating these elements feels very organic. For instance, dishes like gyros, which are closely related to shawarma, reflect the shared culinary traditions between these cultures.
At Yamaz, I focus on highlighting the essence of traditional Mediterranean flavours while enhancing them with local spices, herbs and techniques. I enjoy using ingredients like extra virgin olive oil and oregano, which are staples in both Greek and Middle Eastern kitchens, and incorporate them into dishes that speak to both traditions. My aim is to create a dining experience that feels familiar yet exciting for guests, bridging the gap between these two rich culinary heritages, while keeping the flavours balanced and authentic.

What are your plans for Sofitel Bahrain’s Greek restaurant, Yamaz? Will there be a change in the menu and what can guests expect?
My vision for Yamaz is to make it one of the most renowned Greek restaurants in the country, the ‘place to be’ for those who want to enjoy the finest food, exquisite grapes, incredible sea views and create memories that will last a lifetime. Our menu is constantly evolving, adapting to the seasons, so guests can always look forward to fresh, exciting dishes. There are some truly amazing dishes coming soon to Yamaz that I can’t wait for everyone to try!

What is your favourite cuisine and which Greek ingredient do you enjoy working with the most, and why?
As a native Greek, Mediterranean cuisine, particularly Greek cuisine, has always been my passion. Through my dishes, I aim to bring guests flavours and aromas that remind me of my childhood. In Greek culture, we live by the motto ‘sharing is caring’. My favourite ingredients are always extra virgin olive oil and oregano. These are essential elements of Greek cuisine and I use them in almost every dish at Yamaz. They add authenticity and a touch of home to each plate.

Could you share the inspiration behind your signature dish and what makes it special?
Our signature dish at Yamaz is the Feta Phyllo with Tomato Chili Jam. It’s a traditional dish with a modern twist. Feta cheese and tomatoes are very popular ingredients in Greek kitchens and I’ve always been drawn to the sweet and spicy flavour combination. This dish brings together all the key flavours – spicy, sweet, sour and salty – which for me, is the perfect umami experience. The crispness of the fried phyllo pastry paired with the creamy texture of the melted feta makes it truly special. ✤
