The Artisan is a new Italian restaurant located in the luxurious Waldorf Astoria DIFC, igniting a spark of Italian inspiration in the modern metropolis of Dubai. Head Chef Luca Tresoldi has curated a menu drawn from across Italy and centred on exquisite ingredients, cutting-edge cooking techniques and his creative flair.

The food at The Artisan exudes elegance, pairing Italian culinary prestige with the finest ingredients and the result is a menu that takes its cues from across the breadth of Italy. Although anchored in old-world charm, each dish has been reimagined for the contemporary cosmopolitan palate with each mouthful evoking images of pastoral perfection, architectural beauty, a heritage of majesty and the unmistakable charm that so acutely define the Italian spirit. A taste of Italy’s past, present and future – all rolled into one.

The Artisan sources its ingredients from only the finest suppliers, with Parmigiano Reggiano from Emilia Romagna, Olive Oil from the idyllic Toscana, Tartufo from Piemonte and Parmigiano from the dramatic Emilia Romagna. Having previously worked at the three-time Michelin star winning Florentine restaurant, Enoteca Pinchiorri, Chef Luca knows all about the art of gastronomy and presents not just Italian food, but an Italian experience; nestled in the hearty embrace of Italian hospitality.

The menu opens with a selection of antipasti and salads, including fresh oysters, Apulian Burrata, Patagonian calamari, and a yellowfin tuna tartare. With a commitment to craftsmanship, the kitchen also makes all of its pasta fresh – whether its Paccheri pasta with white veal ragù, gnocchetti with Tuscan Pecorino and black truffle or Agnolotti Del Plin stuffed with pumpkin, butter and sage, served with 30-month-aged Parmigiano Reggiano fondue and roasted Bronte pistachio.

The mains, meanwhile, reflect the various palates from across Italy, ranging from a slow-cooked beef cheek to traditional oven-baked scallops and Milanese veal cutlet and sea bass fillet, served with black truffle and lime cauliflower purée.

With a commitment to craftsmanship, the kitchen also makes all its pasta fresh. For a genuinely soul-stirring experience, pizzas are fermented for 72 hours and dressed in a smattering of delicious ingredients.
