Contemporary Indian cuisine is a treat in itself, but contemporary Indian cuisine perfected by a world-renowned chef? Perfection. Vineet Bhatia became the first Michelinstarred chef to operate in the country back in 2015, and his creations at Rasoi by Vineet continue to captivate foodies across town.

The décor accents here scream regal – read: crystal draping and oversized lighting – setting the tone for what’s to follow, but it’s the show kitchen that remains our favorite feature. We begin our decadent experience at this fine-dining establishment with Honey-Dill Salmon Tikka that, somewhere between its flavour and texture, is one of the best salmon fillets we’ve had in a while.

Over in the mains, the Zucchini Paneer with spinach saag is also a palatepleaser, and an easy choice for vegetarians. Struggling to tear ourselves from the Garlic-Coriander Naan (as expected), we continue on to the inventive Chicken Bhuna with masala wheat crisps. The chicken is slow-cooked, accompanied by a thick and intense sauce, and mild but spiced to perfection. Sold. Rasoi by Vineet’s immensely popular Raj Puri is another culinary highlight. It consists of a round, crisp crepe stuffed with a mixture of potatoes, onions, chickpeas, and tamarind chutney, and more – and deserves a spot in your Instagram feed. Not only is it art on a plate, but it tastes as good as it looks, making it a mustorder. But we digress.

There’s a Kashmiri Lamb Shank Korma on the table, waiting to cater to the diehard carnivores amongst us. If tender, falloff-the-bone meat simmered in a hearty curry sounds appealing, this one’s for you. Stuffed but adamant to carry on, we turn our attention to the Achari Chicken Biryani. It’s spicy, it’s tangy, it’s everything you’d expect when an Indian staple like biryani is paired with pickling spices and chicken slow-cooked in yoghurt. The anticipation for dessert only builds from this point, and we’re delighted to report that our meal ends on a high note. The perfect balance of sweet and salty, the Chocolate Chikki Delice at Rasoi by Vineet is served alongside salted caramel kulfi and wins our seal of approval – several times over. ✤
